how to make the stuffing

  1. In a deep bowl, add 1½ cups thickly grated paneer (cottage cheese). Compared to crumbled paneer, thicker grated pieces can bind with the other stuffing ingredients a bit better.
  2. Add ½ cup finely chopped onions. The finely chopped onions add a bit of crunch that contrasts nicely with the soft paneer and dough.
  3. Add 1 tsp finely chopped green chillies. Beyond the heat, green chillies can add a subtle grassy or vegetal flavor to the stuffing.
  4. Add ¼ tsp turmeric powder (haldi). Turmeric is a bright yellow spice, and it imparts a beautiful golden hue to the paratha filling.
  5. Add ¼ tsp garam masala. It adds a complex and aromatic layer of flavor to the stuffing, elevating it beyond the simple combination of paneer and onion.
  6. Add 1 tsp chaat masala. Chaat masala elevates the flavor profile of your paneer onion paratha by adding a burst of tang, warmth, and savory complexity.
  7. Add 2 tbsp finely chopped coriander (dhania). Coriander leaves bring a vibrant freshness to the paratha filling. Their citrusy, slightly peppery aroma complements the savory flavors of paneer and onion beautifully.
  8. Add salt to taste.
  9. Mix it really well.
