For the gravy

  1. To make {span class="bold1"}shahi paneer recipe{/span}, heat oil and butter in a deep non-stick pan, add cumin seeds, bay leaf, black peppercorns, cinnamon, cardamom, black cardamom, cloves and onions.
  2. Sauté for a minute and add ginger, garlic, kashmiri dry chillies, slit green chilli, cashews, coriander stem and tomatoes.
  3. Mix well and cook on a medium flame for 3 to 4 minutes. Remove on a plate and allow it to cool completely.
  4. Transfer the mixture into a mixer jar and blend it till smooth using ½ cup water. Keep aside.

How to proceed

  1. Heat oil and butter in a deep non-stick pan, add green chillies, ginger juliennes and kashmiri chilli powder. Mix well.
  2. Add the prepared gravy mixture, mix well and cook on a medium flame for 2 minutes.
  3. Add the curd masala mixture and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  4. Add fresh cream, kasuri methi, salt to taste, sugar and paneer pieces.
  5. Mix well and cook on a medium flame for 3 to 4 minutes.
  6. Serve {span class="bold1"}shahi paneer{/span} hot garnished with coriander.
