  1. Combine the chana dal with enough hot water and soak for 2 hours. Drain and keep aside.
  2. Heat the oil in a deep non-stick pan, add the cumin seeds, mustard seeds and asafoetida and sauté on a medium flame for 30 seconds.
  3. Add the dill leaves, spinach and fenugreek and mix well. Cover with a lid and cook on a medium flame for 4 minutes, while stirring occasionally.
  4. Add the chana dal, ginger paste, garlic paste, green chilli paste and ¾ cup of water and mix well. Cover with a lid and cook on a medium flame for 12 minutes, while stirring occasionally.
  5. Add the tomatoes, turmeric powder, coriander powder and salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  6. Serve immediately.

The combination of Suva Palak and Methi works really well. It is easy to make just that the cleaning of leafy greens is hectic so, I clean and store them in the fridge.
