Vegetables in Green Gravy

Ingredients

1 cup chopped mixed vegetables (french beans , carrot , green peas)
1 cup chopped coriander (dhania) leaves
1 tsp chopped green chillies
1 tsp chopped garlic (lehsun)
1 tsp butter
3/4 cup coconut milk
1/4 cup milk
1/4 cup paneer (cottage cheese) cubes
a pinch of sugar
salt to taste
1/2 tsp lemon juice

Method
    Method
  1. Combine coriander, green chillies and garlic along with 2 tbsp of water in a mixer and blend till smooth. Keep aside.
  2. Heat the butter in a deep non-stick pan, add the mixed vegetables and sauté on a medium flame for 3 minutes.
  3. Add the coriander-green chilli paste, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Add ½ cup of water, mix well and cook on a medium flame for 3 minutes, while stirring occasionally.
  5. Add the coconut milk, milk, paneer, sugar and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Switch off the flame, add the lemon juice and mix well.
  7. Serve hot.

Though i am not a huge fan of coconut milk, i really like this one recipe. The coriander gravy with coconut milk tastes really good. This green sabzi was a nice change for my family at the dinner table. Thanks for sharing this recipe.
