Make the most of cauliflower greens to up your haemoglobin levels! Though not very commonly used, these greens are a very good source of iron and lend themselves to the preparation of very tasty dishes, such as this Cauliflower Greens Mixed Sprouts Tikki.

This easy and tasty starter uses mixed sprouts for binding and to enhance the iron , protein and calcium content of the recipe further.

After boiling the sprouts, make sure you drain the excess water completely or else the tikkis will not bind properly.

Ingredients

1 cup finely chopped cauliflower greens
3/4 cup boiled and mashed mixed sprouts
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1/2 tsp coriander (dhania) powder
1/2 tsp cumin seeds (jeera) powder
salt to taste
1 tsp oil for greasing
1 tsp oil for cooking

For Serving

    Method
  1. Combine all the ingredients into a deep bowl and mix very well using your hands.
  2. Divide the mixture into 10 equal portions.
  3. Roll each portion into a 50 mm. (2”) diameter flat round tikki.
  4. Heat a non-stick tava (griddle) and grease it with 1 tsp of oil. Cook all the tikkis on it, using 1 tsp of oil, till they turn golden brown in colour from both the sides.
  5. Serve immediately with coriander chutney.
