Ingredients


For The Potato Rosti Mixture
4 cups thickly grated potatoes
1/2 tsp dried mixed herbs
1/2 tsp dry red chilli flakes (paprika)
salt and pepper to taste
2 tbsp oil

To Be Mixed Into Topping
1/2 cup coloured capsicum strips
1/2 cup sliced onions
1/4 cup boiled sweet corn kernels (makai ke dane)
1/2 tsp dried mixed herbs
1/2 tsp dry red chilli flakes (paprika)
salt to taste

Other Ingredients For Rosti Pizza
2 tbsp oil for cooking
4 tbsp pizza sauce
1/2 cup diced mozzarella cheese

Method

For rosti pizza

  1. To make {span class="bold1"}rosti pizza{/span}, combine all the ingredients for making potato rosti in a deep bowl and mix well.
  2. Heat 1 tbsp oil in a broad non-stick pan, add 1/2 potato rosti mixture and spread it gently using a flat ladle to form a 150 mm. (6”) diameter circle.
  3. Cover it with a lid and cook on a medium flame for 5 minutes until the rosti turns golden brown from the bottom.
  4. Flip the rosti and spread 2 tbsp pizza sauce, arrange 1/2 of the topping and sprinkle 1/4 cup diced cheese evenly over it.
  5. Cover it with a lid and cook on a medium flame for 3 to 4 minutes or till the cheese melts.
  6. Repeat steps 2 to 5 to make 1 more rosti pizza.
  7. Serve the {span class="bold1"}rosti pizza{/span} immediately.
