Khichdi is considered as a comfort food by many. Creativity has no bounds in making an appetizing khichdi. You can choose any dal in combination with the variety of rice you like, toss in some veggies and add masala of your choice in the right proportion. Here we present to you mix vegetable masala khichdi – a perfect one dish meal for dinner.

Ingredients


For Vegetable Khichdi
1 cup wada kolum rice (chawal) , soaked for 15 minutes and drained
1 cup yellow moong dal (split yellow gram) , soaked for 15 minutes and drained
1/2 cup french bean cubes
1/2 cup carrot cubes
1/2 cup potato cubes
1/2 cup cauliflower florets
1/2 cup green peas
2 tbsp ghee
2 tsp cumin seeds (jeera)
6 curry leaves (kadi patta)
1 tbsp finely chopped garlic (lehsun)
1/2 tsp green chilli paste
1/2 cup finely chopped onions
1/2 cup finely chopped tomatoes
1 tsp chilli powder
1 tsp turmeric powder (haldi)
1 tsp shahi biryani masala
1 1/2 tsp coriander (dhania) powder
salt to taste
2 tbsp finely chopped coriander (dhania)

For Serving
ghee
curd
pickle
papad

Method

For vegetable khichdi

  1. Combine the rice, yellow moong dal, ½ tsp turmeric powder, salt and 3 cups of water, mix well and pressure cook for 3 whistles.
  2. Mash it lightly and keep aside.
  3. Heat the ghee in a deep pan and add the cumin seeds.
  4. When the seeds crackle, add the garlic, green chilli paste and onions and sauté on a medium flame for 2 minutes.
  5. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Add the french beans, carrot, green peas, potatoes and cauliflower and sauté on a medium flame for 3 to 4 minutes.
  7. Add the chilli powder, remaining ½ tsp of turmeric powder, shahi masala, coriander powder, salt and 2 cups of water, mix well and cover with a lid and cook for 15 minutes, while stirring occasionally.
  8. Add the cooked rice-dal mixture and 3½ cups of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  9. Add the coriander and mix well.
  10. Serve hot with ghee, curd, pickle and papad.
