Ingredients


For The Spinach Dumplings
2 cups finely chopped spinach (palak)
1/2 tsp finely chopped green chillies
1/4 cup besan (bengal gram flour)
1 tbsp whole wheat flour (gehun ka atta)
2 tsp low-fat curds (dahi)
1/2 tsp sugar
a pinch of asafoetida (hing)
salt to taste

To Be Ground Into A Smooth Paste (using Approx.. 3 Tbsp Of Water)
1 tsp roughly chopped green chillies
1 tsp roughly chopped ginger (adrak)
2 tbsp roasted chana dal (daria)
1 tsp cumin seeds (jeera)

For The Curd Curry
1 cup low-fat curds (dahi)
1/4 tsp turmeric powder (haldi)
salt to taste
2 tsp oil
1 tsp mustard seeds ( rai / sarson)
1 tsp urad dal (split black lentils)
5 curry leaves (kadi patta)
2 whole dry kashmiri red chillies , broken into pieces
a pinch of asafoetida (hing)

For The Garnish
2 tbsp finely chopped coriander (dhania)

Method
For the spinach dumplings

  1. Combine all the ingredients in a deep bowl and mix well.
  2. Divide the mixture into 12 equal portions and shape each portion into round balls.
  3. Steam the dumplings in a steamer for 5 to 7 minutes. Keep aside.

For the curd curry

  1. Combine the curds, turmeric powder, prepared paste, salt and ½ cup of water in a deep bowl, whisk well and keep aside.
  2. Heat the oil in a non-stick kadhai and add the mustard seeds and urad dal.
  3. When the mustard seeds crackle, add the curry leaves, red chillies and asafoetida and sauté on a medium flame for a few seconds.
  4. Add the curds mixture, mix well and cook on a slow flame for 2 to 3 minutes, while stirring continuously.

How to proceed

  1. Just before serving, add the spinach dumplings to the curd curry, mix gently and cook on a medium flame for 1 to 2 minutes.
  2. Serve immediately garnished with coriander.

The curd curry is the highlight of this recipe. It tastes too good. Moreover the non-fried spinach dumplings are flavourful too. I will surely try this recipe again.
