Sautéeing the garlic till brown gives this rice preparation its unique flavour. Together with green chillies, crunchy vegetables and soya sauce, burnt garlic lends an exciting touch to perfectly cooked Chinese rice. Serve the Burnt Garlic Fried Rice hot, with a garnish of spring onions and fried garlic, for an experience that will be remembered for long.

Burnt Garlic Fried Rice recipe - How to make Burnt Garlic Fried Rice

Ingredients

2 tbsp finely chopped garlic (lehsun)
3 cups cooked chinese rice
3 tbsp oil
2 tsp finely chopped green chillies
1/2 cup sliced spring onions whites
1/4 cup finely chopped spring onion greens
3/4 cup chopped and parboiled mixed vegetables
(french beans and carrots)
1/2 tsp soy sauce
1/2 tsp vinegar
salt to taste

For The Garnish
2 tbsp finely chopped spring onion greens
1 tbsp fried garlic (lehsun)

Method
    Method
  1. Heat the oil in a broad non-stick pan, add the garlic and sauté on a high flame for 2 minutes or till the garlic turns brown in colour.
  2. Add the green chillies and spring onion whites and sauté on a high flame for 1 minute.
  3. Add the spring onion greens and sauté on a high flame for 30 seconds.
  4. Add the mixed vegetables and sauté on a high flame for 1 minute.
  5. Add the soya sauce, vinegar, rice and salt, mix well and cook on a high flame for 2 minutes, while stirring occasionally.
  6. Serve hot garnished with spring onion greens and fried garlic.

Notes to make perfect Burnt garlic fried rice

  1. There is a very specific way of cooking rice for Chinese recipes, so that you get well-cooked yet separate grains. For that follow our recipe with detailed step by step photos for Chinese Cooked Rice.
  2. We have parboiled the vegetables so that the veggies get cooked quickly while sautéing and are crisp and palatable.
  3. We have used refined oil but if you wish you can use any other oil preferably with high smoking point like sesame oil or peanut oil.

To make Burnt Garlic Fried Rice

  1. Heat the oil in a broad non-stick pan. If you have a wok, then make use of it. Always make use of big pans while making Chinese rice recipes so, the rice do not clump together on tossing.
  2. Once the oil has heated and hot enough, add the garlic and sauté on a high flame for 2 minutes or till the garlic turns brown in colour. While doing so the oil absorbs the flavour of the garlic which gives a unique flavour to the burnt garlic fried rice.
  3. Then add the finely chopped green chillies. The quantity can be adjusted as per your personal preference.
  4. Add the sliced spring onion whites and sauté on a high flame for 1 minute. It is very important to saute vegetables on a high flame so they retain their crunch on tossing.
  5. Add the spring onion greens. Sauté again on a high flame for 30 seconds.
  6. Add the mixed vegetables. Here we have made use of carrots and french beans. You can make use of any crispy vegetables like bell pepper, baby corn, broccoli etc. Sauté on a high flame for 1 minute.
  7. Add the soya sauce. It provides a umami flavour to the burnt garlic fried rice.
  8. Add vinegar. It is optional to add vinegar in this recipe.
  9. Add the cooked rice and salt as per taste. If you have added salt while cooking the rice then be careful at this point. Also, soy sauce is slightly salty in flavour.
  10. Mix well and cook on a high flame for 2 minutes, while stirring occasionally.
  11. Serve the burnt garlic fried rice hot garnished with spring onion greens and fried garlic.
