Dal Amritsari, as the name suggests is a dal from the city of Amritsar in North India. Prepared with whole black lentils or whole urad, this dal is ready in a jiffy when cooked in a pressure cooker, without compromising on the taste.

A tadka or tempering is prepared for this dal with tomatoes onions and a blend of Punjabi spices. No Punjabi dal is complete without the use of some Punjabi garam masalas. Serve hot garnished with some chopped coriander or butter.

Serve with parathas like Aloo Methi Parathas , Jalebi Paratha , Punjabi Reshmi Paratha , Paneer and Vegetable Paratha or Paushtic Parathas .

  1. Clean, wash and soak the urad dal and chana dal in enough water for 1 hour.
  2. Drain well using a strainer.
  3. In a pressure cooker, add the soaked dal, turmeric powder, salt and 2 cups of water.
  4. Mix well and pressure cook for 4 whistles.
  5. Allow the steam to escape before opening the lid. Keep aside.
  6. Heat the ghee in a deep non-stick pan and add the cumin seeds.
  7. When the seeds crackle add the ginger, green chillies and garlic and sauté on a medium flame for 30 seconds.
  8. Add the onions and sauté on a medium flame for 1 minute.
  9. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  10. Add the chilli powder, coriander powder and salt, mix well and cook on a medium flame for 1 minute.
  11. Add the cooked dal and ¼ cup of water, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  12. Serve the dal amritsari hot garnished with coriander.

How to make Dal Amritsari

  1. For making the Dal Amritsari (Punjabi Amritsari dal), clean and wash the urad dal and chana dal. Both chana dal and urad dal are rich in protein and this simple preparation is a great way to consume it.
  2. Soak the dals in enough water.
  3. Cover with a lid and keep aside for 1 hour.In fact, you can even soak them over-night to give a really softer, mushy texture.
  4. Drain well using a strainer.
  5. In a pressure cooker, add the soaked dals.
  6. Also, add turmeric powder, salt.
  7. Add 2 cups of water.
  8. Mix well and pressure cook for 4 whistles or till the dals are cooked and soft.
  9. Allow the steam to escape before opening the lid. Keep aside. Be careful so that you don’t burn yourself with the steam.
  10. Heat the ghee in a deep non-stick pan. You can even make use of oil but, ghee enhances the overall flavor of the Dal Amritsari.
  11. Once the ghee is hot, add the cumin seeds.
  12. When the seeds crackle add the ginger.
  13. Furthermore, add green chillies and garlic. I love freshly pounding the condiments using a mortar and pestle. I would suggest you do the same to add freshness to your food preparation.
  14. Sauté on a medium flame for 30 seconds.
  15. Add the onions and sauté on a medium flame for 1 minute.
  16. Add the tomatoes.
  17. Mix well and cook on a medium flame for 2 minutes, while stirring occasionally or till the oil starts leaving the mixture slightly.
  18. Add the chilli powder.
  19. Add the coriander powder and salt. We even added salt while cooking the dals so be careful while adding this time.
  20. Mix well and cook on a medium flame for 1 minute.
  21. Add the cooked dal.
  22. Add about ¼ cup of water. The langarwali dalDal Amritsari (Punjabi Amritsari dal) is generally thick in consistency. You can add more or less water to adjust the consistency as per your requirement.
  23. Mix the Dal Amritsari (Punjabi Amritsari dal) well and cook on a medium flame for 2 minutes, while stirring occasionally. Also you can lightly mash the dal with the back of the spoon to give it a creamy texture.
  24. Serve the Dal Amritsari (Punjabi Amritsari dal) hot garnished with coriander.
  25. Dal makhani, Punjabi dal tadka, dal fry are some popular dal prepartions like Amratsari Dal that you would enjoy!

This recipe used to be slightly different. You added onions and ginger to the dal and after it pressured cooked, you could add milk. Do you have a link to the recipe the way it used to be posted? It probably wasn''t really amritsari but it was a delicious dal!

   Hi, This recipe is a very subtle in taste.. if milk added it will become similar to dal makhani.Ideally it is a slow cooked dal.. if you can cook the dal in and simmer them for longer in a heavy bottomed pan. It will give you better taste.. Do try the recipe and give us your feedback..

Lovely recipe, I make it regularly. The nutrient values on the picture are VERY incorrect tho if this recipe is for 4 portions
