Ingredients


For The Tikka
8 soya chaap
1 cup big onion cubes
1/2 cup big tomato cubes
1 cup big green capsicum cubes
2 tbsp butter for brushing

For The Marinade
2 tsp green chilli paste
1 tbsp ginger (adrak)
5 tbsp whisked curd (dahi)
2 tbsp cheese spread
1/4 tsp cardamom (elaichi) powder
1/2 tsp chaat masala
1/2 tsp white pepper powder
1/4 tsp garam masala
1/4 tsp freshly ground black pepper (kalimirch)
1 tbsp dried fenugreek leaves (kasuri methi)
salt to taste
1 tbsp oil

For Sprinkling
1/2 tsp chaat masala
2 tbsp melted butter
2 tbsp fresh cream
1 tsp lemon juice
1 tbsp finely chopped coriander (dhania)

Other Ingredients
oil for deep-frying
1 medium sized charcoal
1 tbsp ghee

Method
  1. To make {span class="bold1"}malai soya chaap tikka{/span}, heat oil in a deep non-stick pan. Deep fry the soya chaap till golden brown.
  2. Drain them on an absorbent paper. Remove the sticks gently from the fried chaap.
  3. Cut the fried soya chaap diagonally into 3 pieces each. Similarly, cut the remaining chaap.
  4. In a deep bowl, add the fried soya chaap pieces, salt, green chilli paste and ginger garlic paste. Mix well and keep aside.
  5. In another deep bowl, oil, add fresh curd, cheese spread, cardamom powder, chaat masala, white pepper powder, garam masala, black pepper, lightly crushed kasuri methi and salt.
  6. Whisk all the ingredients well, add fried soya chaap pieces, onion cubes, tomato cubes and capsicum cubes into the marinade.
  7. Mix well and marinate for 15 to 20 minutes.
  8. Now give smoke of live charcoal and put ghee over it cover the bowl and keep aside for 2-3 minutes.
  9. Arrange onion, soya chaap, tomato and capsicum on 8 skewers.
  10. Cook the chaap skewer on an open flame while applying melted butter all over until the chaap is charred for better taste and flavour.
  11. Remove the charred chaap in a deep bowl, sprinkle chaat masala, butter, fresh cream, lemon juice, and coriander. Mix well.
  12. Serve hot with onion rings, lemon wedge and green chutney.
