Ingredients


To Be Mixed Into A Stuffing
1 1/4 cups crumbled fresh paneer (cottage cheese)
1/4 cup finely chopped capsicum
1/4 cup finely chopped onions
4 tsp finely chopped green chillies
2 tbsp finely chopped coriander (dhania)
salt to taste

Other Ingredients
8 bread slices
butter for spreading and greasing
8 tsp green chutney

For Serving
tomato ketchup
green chutney

Method

For paneer capsicum toast

  1. Divide the stuffing into 4 equal portions. Keep aside.
  2. To make {span class="bold1"}paneer capsicum toast{/span}, take 2 bread slices and apply 1 tsp of butter and 1 tsp of green chutney on each bread slice and keep aside.
  3. Place one portion of the stuffing on one buttered-chutney slice and spread it evenly.
  4. Cover it with another slice of bread, with the buttered- chutney side facing downwards and press it lightly.
  5. Spread ¼ tsp of butter evenly over the bread slice.
  6. Grease a sandwich toaster on both the sides using ½ tsp of butter.
  7. Place the sandwich in the sandwich toaster and cook on a medium flame, till it turns brown and crisp from both the sides.
  8. Cut the toast into 4 equal pieces.
  9. Repeat steps 2 to 8 to make 3 more {span class="bold1"}paneer capsicum toast{/span}.
  10. Serve {span class="bold1"}paneer capsicum toast{/span} immediately with tomato ketchup and green chutney.
