2 cups rice noodles
1/2 cup bean sprouts
1/2 cup french beans cut into 1 “ and blanched
3/4 cup blanched broccoli florets
1 tbsp oil
1 tsp soy sauce
salt to taste

For The Curry Sauce
1 cup coconut milk (nariyal ka doodh)
1 1/2 tbsp red curry paste
1 tsp tamarind (imli) paste
1 tbsp sugar
1 tbsp chopped roasted peanuts
1/2 cup finely chopped onions
salt to taste

  1. Heat the oil in a broad non-stick pan, add the noodles, bean sprouts, beans and broccoli and sauté on a medium flame for 2 minutes, while stirring occasionally.
  2. Add the soya sauce and salt, mix well and cook on a medium flame for 1 minute. Keep aside.

  1. Combine all the ingredients in a broad non-stick pan, mix well and cook on a medium flame for 4 minutes, while stirring occasionally. Keep aside.

  1. Take enough water in a deep nonstick pan, add approx. 100gms of the rice noodles. Let it boil on a medium flame for 4 mins.

  3. Microwave on high for 6 minutes.
  4. Drain using a strainer. Keep aside.
  5. Take the French beans in a microwave safe bowl.

  8. Drain using a strainer. Keep aside.

  3. Add bean sprouts.
  4. Next, toss in some beans.

  7. Add the soya sauce and salt. Do not overcook or over mix or else the vegetables will lose their crunch.
