soya mutter pulao recipe | soya chunks peas pulao | soya matar pulao | soya chunks pulao | is made of cheap and easily available ingredients in India: 1 cup soya chunks, ½ cup green peas, 1 1/2 cups long grained rice (basmati), soaked for 30 minutes and drained, 2 tbsp oil, 1 small stick cinnamon (dalchini), 3 cloves (laung / lavang), 2 bayleaf (tejpatta), 1 cardamom (elaichi), 1/2 tsp cumin seeds (jeera), 1 tbsp ginger garlic paste, 1 cup sliced onions, 4 sliced green chillies , 1 cup sliced tomatoes, ¼ cup curd, 1/4 tsp turmeric powder (haldi), 1 tsp chilli powder, 1 tsp cumin seeds powder, 1 tsp coriander (dhania) powder, 1 tbsp biryani masala, salt to taste, 2 tbsp finely chopped mint leaves and 2 tbsp finely chopped coriander. Add enough hot water in a deep bowl.

Soak 1 1/2 cups of soya chunks in hot water and keep aside for 10 minutes.

Squeeze out the water from the soya chunks and keep aside.

Add 1 small stick cinnamon (dalchini).

Add 3 cloves (laung / lavang).

Add 2 bayleaf (tejpatta).

Add ½ tsp cumin seeds (jeera).

When the cumin seeds crackle add 1 tbps ginger-garlic (adrak-lehsun) paste and 1 cup sliced onions.

Sauté on a medium flame for 3 to 4 minutes till golden brown.

Add 3 sliced green chillies.

Add 1 cup chopped tomatoes.

Saute for a minute on medium flame.

Add ¼ cup curd.

Add ¼ tsp turmeric powder (haldi).

Add 1 tsp chilli powder.

Add 1/2 tsp cumin powder.

Add 1/2 tsp coriander (dhania) powder.

Add 1 tbsp biryani masala.

Mix well and cook on a slow flame for 2 minutes, while stirring continuously.

Add ½ cup green peas.

Add the soaked and drained soya chunks.

Add ¼ cup of water.

Mix well and cook on a medium flame for 3 minutes, while stirring occasionally.

Add 1 1/2 cup long grained rice (basmati) , soaked.

Add salt to taste.

Add 2 1/2 cups of hot water.

Mix well and cover with a lid and cook for 10 to 12 minutes until done.

Switch off the flame, add 2 tbsp finely chopped mint leaves (phudina).

Add 2 tbsp finely chopped coriander.

Mix gently and separate each grain of rice lightly using a flat spoon.

Cover with a lid and keep aside for 10 minutes.
