Ingredients


For The Paneer Bhurji
1 1/4 cups crumbled paneer (cottage cheese)
1 tbsp oil
1 tbsp butter
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/4 cup finely chopped capsicum
1/4 cup finely chopped tomatoes
1 tsp chilli powder
1/2 tsp garam masala
1/4 tsp turmeric powder (haldi)
1 tsp pav bhaji masala
salt to taste
2 tbsp finely chopped coriander (dhania)

Other Ingredients
3 panini bread or hot dog rolls
6 tsp melted butter for spreading and brushing
6 tsp green chutney
4 tbsp finely chopped spring onion greens

Method

For the paneer bhurji

  1. Heat the oil and butter in a broad non-stick pan, add the garlic, green chillies and onions and sauté on a medium flame for 1 to 2 minutes.
  2. Add the capsicum and tomatoes, mix well and cook on a medium flame for 2 to 3 minutes.
  3. Add the chilli powder, garam masala, turmeric powder, pav bhaji masala and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Switch off the flame; add the paneer and coriander, mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Keep aside.

How to proceed

  1. To make {span class="bold1"}paneer bhurji panini{/span}, divide the paneer bhurji into 3 equal portions. Keep aside.
  2. Cut each panini bread or hot dog roll horizontally using a sharp knife.
  3. Take 2 pieces of the panini, on a clean dry surface. Apply 1 tsp of melted butter on each side.
  4. Apply 1 tsp of green chutney on each side.
  5. Put a portion of the paneer bhurji on the lower halve and spread it evenly.
  6. Sprinkle 1 tbsp of spring onion greens evenly over it.
  7. Close the bread and apply ½ tsp of melted butter on top of the bread and grill in a greased pre-heated sandwich griller for 5 minutes till they turn crispy and brown from both the sides.
  8. Repeat steps 3 to 7 to make 2 more paninis.
  9. Cut each sandwich diagonally into 2 equal pieces.
  10. Serve the {span class="bold1"}paneer bhurji panini{/span} immediately.
