The kadai is one of the oldest and most common of cooking utensils, found in almost every Indian home. It is thick and round-bottomed, and available in various volumes. It is usually used for sautéing, deep-frying, and for preparing curries and gravies. While traditional kadhais are made of clay, iron or aluminium, busy and health-conscious people sometimes opt for a non-stick Kadhai as food does not stick to it, and therefore cooking requires less oil.
