Makes 8 spring rolls


Ingredients


For Rice Paper Dumplings
8 rice wrappers
1 tsp sesame seeds (til)
1 tsp black sesame seeds (kala til)
oil for cooking

For The Stuffing
2 tbsp oil
1 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
1/4 cup thinly sliced carrots
1/2 cup shredded cabbage
1/2 cup thinly sliced capsicum
1/2 cup boiled noodles
1/4 cup finely chopped spring onions
2 tsp schezwan chutney
1 tsp red chilli sauce
1 tsp soy sauce
1 tsp vinegar
salt to taste

Method

For the stuffing

  1. To make {span class="bold1"}rice paper dumplings{/span}, heat the oil in a wok or a deep non-stick kadhai on a high flame.
  2. Add the garlic and ginger, sauté on a high flame for few seconds.
  3. Add all the remaining vegetables, noodles and mix well.
  4. Add schezwan chutney, red chilli sauce, soya sauce, vinegar and salt to taste.
  5. Sauté on a high flame for 2 minutes.
  6. Garnish with spring onions and keep aside.

How to proceed

  1. Take a sheet of rice paper and dip it in water for few seconds or till it softens.
  2. Place it on a flat, dry surface and put a portion of the stuffing on one edge of the wrapper and fold to make a spring roll.
  3. Repeat steps to make remaining 7 rice paper dumplings.
  4. Heat little oil in a broad non-stick pan, cook the dumplings from both the sides until golden brown and crisp.
  5. Garnish with sesame seeds and serve the {span class="bold1"}rice paper dumplings{/span} hot.
