Ingredients


Other Ingredients
18 bread slices
1 tbsp almond (badam) slivers
1 tbsp pistachio slivers
2 tbsp chopped mangoes

For The Ras
2 1/2 cups milk
2 tbsp custard powder
1/4 cup sugar
1/4 tsp cardamom (elaichi) powder
a pinch of saffron (kesar) strands
1/2 cup mango pulp

To Be Mixed Into Malai Mixture
1/4 cup fresh cream
1/2 cup milk powder
3 tbsp powdered sugar
1/2 cup chopped mangoes

Method

For the ras

  1. To make {span class="bold1"}mango bread rasmalai{/span}, combine custard powder and ½ cup milk in small bowl.
  2. Boil milk in a deep pan, add sugar, custard mixture, cardamom powder, saffron strands.
  3. Mix well and cook on medium flame for 5 minutes, while stirring occasionally until it becomes slightly thick consistency.
  4. Switch off the flame and allow it to cool completely.
  5. Now add mango pulp and mix well.

For the malai mixture

  1. Combine fresh cream, milk powder and powdered sugar in a small bowl.
  2. Add chopped mangoes and mix well and keep aside.

How to proceed

  1. Place a bread slice on a clean dry surface, cut the bread roundel using a cutter or a vati.
  2. Similarly make 18 bread roundels, keep aside.
  3. Place 2 bread roundels on a clean dry surface, apply 1 tbsp of malai mixture on 1 bread roundel.
  4. Sandwich it using another bread roundel and press it slightly.
  5. Similarly prepare 8 more bread rasmalai sandwich.
  6. Arrange them on a serving plate and pour the ras mixture over the bread rasmalai sandwich to coat them completely.
  7. Garnish with almond slivers, pistachio slivers and chopped mangoes.
  8. Refrigerate for an hour and serve the {span class="bold1"}mango bread rasmalai{/span} chilled.
