chole bhature | Punjabi chole bhature | with 29 amazing images My earliest memories of Chole Bhature is of the one I ate at a popular eatery in Mumbai Known as "Cream Centre". On enquiring, I was told that the chick peas and spices were simmered together for hours resulting in a dish that a large number of Mumbaites relish even today! My version of chole is however, ready in minutes and is as delicious. I have also added powder, which impart a dark brown colour to the chick peas which usually comes from simmering chick peas in an iron pot. I enjoy eating hot chole with tikkis, bhaturas, kulcha or simply topped on a slice of bread. Crisp, yet spongy bhaturas are used to mop up the chole. Traditionally bhatura dough was made using leavening agents like soda, curds and leaving it for hours to ferment before they could be rolled out and deep fried. This recipe of bhature is one that uses mashed potatoes to soften up the bhaturas. Moreover, also these bhaturas do not turn rubbery and chewy when they are eaten cold. Kulcha is one of the most popular breads in Northern India, just like naans, rotis and parathas. Made with a dough of whole wheat flour, yeast and curds, these Kulchas have a unique texture and mouth-feel. Follow the instructions in the recipe consistently to ensure that the yeast gets activated well and the dough rises nicely. sweet Punjabi lassi recipe | dahi ki lassi | sweet lassi | 2 ingredient lassi recipe | with 7 amazing images. The secret to making perfect sweet Punjabi lassi lies in the curds. If the curds are loosely set or sour, you will just not get it right. So, the first step is to put the curds into the refrigerator as soon as it sets, so that after some time it will be thick and luscious, with a fresh flavour that is just perfect for dahi ki lassi. All you need is such fresh curds and sugar to make a large glass of thick sweet Punjabi lassi which is not only refreshing but also quite satiating. Sometimes, a glass of sweet Punjabi lassi can be a mini meal itself! Notes and tips on making the perfect sweet Punjabi lassi. 1. To make the Sweet Lassi (Punjabi Sweet Lassi), take thick curd in a deep bowl. If the curd is not thick, the sweet lassi will be very watery. Use chilled curd for a cold lassi or if you are using room temperature curd then refrigerate till serving. 2. To this, add the powdered sugar. Do not use sugar crystals as they will not dissolve in the curd. You can even add different spices like cardamom and saffron for a unique lassi. 3. Now whisk the curd till smooth. Make sure the sugar has been properly mixed in with the curd. 4. Since we have used thick curd, we are adding just about 1/4 cup of water to loosen the Sweet Lassi a little so it isn’t too thick to drink. Enjoy lassi after relishing chatpata chaats like Chole Tikki Chaat, Sev Puri, Chilla Chaat etc. Other variants of dahi ki lassi to try are Grape Lassi, Mango Lassi, Kesar-Pista Lassi, Cardamom Lassi and salty variant like Phudina Lassi . Refrigerate the Sweet lassi for at least 30 minutes before serving. This is because lassi is best served chilled and it also gives the sugar time to dissolve properly into the curd. Remember to use freshly chopped ginger, garlic and green chillies to get the perfect taste. Vada pav is a famous Mumbai Street Food and a vendor is found selling vada pav on every other Mumbai street and on railway stations. Craving for vada pav and wanting it to be ultra hygienic? There is no better way than making batata vada pav at home as it is definitely hygienic and the ingredients used are also fresh. The procedure to make Mumbai style vada pav is not at all complex but very simple. First, we have started with making the potato filling by pounding the green chillies, ginger and garlic using a mortar and pestle. Further, heat the oil and add the mustard seeds. When they crackle, add the asafoetida and curry leaves. Add the pounded mixture which will give a unique flavor to our vada pav. Add the potatoes, turmeric powder for the colour and salt and mix well. Remove from the fire and let it cool. Divide and shape into rounds balls and keep aside. Further to cover them, we have made a thick batter using besan, turmeric powder, baking soda and little salt. Next, dip the potato balls in the batter and deep fry until golden brown. Next, to assemble vada pav, take a ladi pav and slit it from the centre, but do not cut fully. These days whole wheat laadi pav are also available in many bakery stores.. If you wish you can make them at home, check out our recipe for whole wheat laadi pav. Next, Spread some sukhi leshun ki chutney on the bottom half of the laadi pav. Place the vada over it and tradional style vada pav is ready. We have also shown the process to assemble Mumbai style vada pav, first spread some meetha chutney on a slit pav. Then spread some teekha chutney over it. Finally spread some sukhi leshun ki chutney over it. Place the vada and press the pav and the Mumbaiya style vada pav is ready to serve. Serve immediately while the vadas are still hot. You can also serve along with some fried green chillies. These days there are many ways to make and serve the vada pav. Some vada pavs are made with an array of chutneys and some of the vada pavs are made with chutneys, topped with onions, mayonnaise and cheese while some vada pavs are served with the besan chura made from left over besan batter along with chutneys. Succulent and spicy potato vadas are sandwiched between fresh pav bread along with dry garlic chutney, to make a delicious snack that tickles the taste buds and satisfies the tummy. I have fond memories of sharing a vada pav with my son while travelling on a business trip to Vapi by train. Although vada pav is a Maharashtrian dish, I was surprised to find it popular even in Gujarat. Another travelling ritual on my frequent drives to Pune is to stop at a small café on the highway to grab a quick vada pav and a steaming hot cup of Masala Tea that chases away all my travel fatigue. banana paratha recipe | Delhi banana paratha street food | kela roti with jaggery | with 15 amazing images. A culinary gem from the streets of Delhi, the banana paratha is a delicacy that is much-loved by kids and adults alike. As soon as you read the name banana paratha, you would have assumed several things, like say, a paratha with a spicy filling of raw banana! No, this recipe is completely the opposite. It is made with ripe bananas, sweetened with jaggery and laced with cardamom. Further, it is interesting to note that the banana mix is not stuffed into the parathas but worked into the dough itself! Take care when making the dough. Combine the banana mixture and the flour, and add water only on a need basis. Otherwise, you might end up with a loose dough that cannot be rolled easily. Also make sure you cook the sweet banana paratha with ghee, in order to get a rich and authentic taste. One thing about this recipe is that it must be relished really hot, right off the tava. It is actually quite easy to make, and will be loved by everybody. You can also try other mouth-watering parathas like the Onion, Cheese and Pepper Parathas , and the Palak Paratha. Pro tips for banana paratha. 1. In a non-stick pan put 1 1/2 cups chopped banana. Ripe bananas add natural sweetness and a unique flavor profile to the paratha. Banana paratha can be enjoyed plain or stuffed with a variety of savory fillings. The sweetness of the banana complements both sweet and savory flavors. 2. Add 1/4 cup roughly chopped jaggery (gur). Jaggery is a natural, unrefined sweetener derived from sugarcane or palm sap. It provides sweetness to the paratha, complementing the natural sweetness of ripe bananas. 3. Add 1 1/2 cups whole wheat flour (gehun ka atta). Some people simply prefer the taste and health benefits of whole wheat flour. They might choose it for banana paratha even though refined flour might be a more traditional option.
